Side: 'See-in-the-Dark' Carrot and Raisin Salad
Gluten-free, wheat-free, vegan, raw food
- 3 large carrots, grated
- handful raisins or sultanas (unsulphured, if possible)
- handful cashew nuts, coarsely chopped
- handful pecan nuts, coarsely chopped
- 1 tbsp sunflower seeds
- 1 tbsp pumpkin seeds
- 1/4 cup low fat vinaigrette dressing
- Mix all ingredients with enough basic dressing to moisten salad.
- Garnish with some extra nuts, seeds and raisins.
